The course is ideal for those looking to expand their food preservation skills and like to brew their own beverages at home as it will enable you to learn how to make traditional fermented food like sauerkraut and kimchi and get you started experimenting with kombucha and kefir.
This also explores the use of fermentation in biofertilser that you can easily apply to your garden and enhance the growth of the fruit and vegetables you can ferment!
All food and refreshments are provided and you will get to take home all the preparations and substrates you make over the weekend.

Learning methods and outcomes
The course will involve group activities and individual practice as well as some theoretical study of the practical processes involved in fermentation. Participants will get first hand experience of the materials, tools and techniques involved. The course content is complimented by a list of resources detailing the descriptions of all the techniques covered during the course, and a group forum for ongoing support.
Course Instructor
Matt Tarnowski has 4 years of fermenting experience and a PhD in microbiology. Matt is enthusiastic for the natural world, foraging and fermenting, and finding agroecological solutions for our future food and farming systems.
Venue/Accommodation
Coed Talylan is a 70 acre woodland on the western edge of the Brecon Beacons. Nestled below the iron age hill fort of Garn Goch in the foothills of the Black Mountain it offers a secluded and peaceful location for our course participants to learn and explore the potential of applying agroecology within a co-sufficient community.
Accommodation is available as camping around our guest lodge, an A-frame wooden cabin with kitchen and dining/living space. We have running filtered spring water throughout the site, compost toilets and wash facilities.
Alternatively there is local accommodation available in nearby towns and villages (Llangadog, Llandovery and Llandeilo)
Arrival and Departure
Participants are welcome to arrive on the evening before the course between 5pm and 8pm. The course ends at 4:30 on Sunday
Transport
We are offering a 10% discount for those that use public transport to travel to the venue. We also help facilitate lift sharing opportunities. The rail service to Llangadog is part of the “Heart of Wales Line” an historic railway running from Shrewsbury to Swansea. If you choose to arrive by train or bus we offer a collection service from Llangadog at set times (contact us for more information).

We endeavour to make our courses and events affordable to all. Unfortunately, we do not receive any external funding and rely on large amounts of voluntary input. Concessions are available for pensioners, unemployed and full-time students.
We offer a 10% discount for OPD owners and LWA members. There is a 15% for Supporter Members of CTLT.
