Fried Oyster Mushrooms (Vegan Fried “Chicken” Style)

A crispy, savoury snack or meal idea that gives oyster mushrooms a crunchy fried coating similar to classic fried chicken—completely plant-based!

Ingredients

  • Main:

    • 150g oyster mushrooms

  • Dry coating mix:

    • 1½ cups plain flour

    • 1½ teaspoons paprika

    • 1½ teaspoons garlic powder

    • 1½ teaspoons onion powder

    • 1 teaspoon ground turmeric

    • ¼ teaspoon cayenne pepper (optional, adjust to your heat preference)

    • 1 teaspoon salt

    • Cracked black pepper to taste

  • Wet batter:

    • ⅓ cup of the above seasoned flour mix

    • ¾ cup water

  • For frying:

    • Neutral-flavoured oil suitable for high-heat frying (like sunflower or rapeseed oil)


Method

  1. Clean the Mushrooms
    Use a damp paper towel to gently clean the oyster mushrooms. Avoid washing them directly under water to preserve their texture.

  2. Make the Dry Mix
    In a mixing bowl, combine flour with all the spices and seasoning. Stir until everything is evenly distributed.

  3. Prepare the Batter
    Take about ⅓ cup of the seasoned flour and combine it with water in a separate bowl to create a smooth, slightly thick batter.

  4. Coat the Mushrooms
    Dip each mushroom first into the wet batter, then into the dry flour mix. For an extra crispy result, repeat the process to double coat.

  5. Frying
    Heat the oil in a deep pan or pot until hot (you can test by dropping in a pinch of flour—it should sizzle). Fry the mushrooms in small batches, turning as needed, until golden brown and crispy.

  6. Drain
    Remove the mushrooms with tongs or a slotted spoon and place them on paper towels or a rack to let excess oil drip off. This also helps them stay crisp.


These crispy oyster mushroom bites are excellent served hot with your favourite dipping sauce. They also go well in wraps, burgers, or on top of a salad for an extra crunch.
